Baraboo’s newest Mexican restaurant is a little different, by design.

Quezadillas offers made-from-scratch tortillas, homemade salsa and snacks such as spiropapas (spiral potatoes), mangos on a stick and chicharrones (fried pork). Owner Luis Flores based his menu on his grandmother’s homemade food.

“We wanted to let them into our experience as a family,” said Flores, who employs his mother, stepfather and aunt.

Quezadillas opened in June on South Boulevard in the former home of Cousins Subs. It serves lunch and dinner six days a week.

Flores is a Sauk Prairie High School graduate who participated on the culinary arts team. He wasn’t sure which direction to follow after his U.S. Army service until an April visit to Baraboo, when family members put him in touch with Nick Singh, owner of the commercial complex that once housed Cousins. Flores found himself returning to a long-held dream to establish a restaurant.

“I had that idea going in the back of my head,” he said. “I felt like it was the right thing to do. Things fell into place.”

His goal was to offer authentic Mexican food that’s quicker than a sit-down restaurant, but a cut above fast food.

“So far, people like it,” Flores said. “Overall, we’ve had a good response.”

Many customers appreciate that Quezadillas offers hard-to-find menu options. Others require a little education once their curiosity is piqued. “They start seeing these items coming out to the dining room, and they’re like, ‘Wait, what is that?’” Flores said.

Quesadillas have been the top sellers, as customers get to choose their meats, toppings, cheeses and sauces. “They’re building it to their tastes, and they’re seeing the item being created before them,” Flores said. “People love that it’s fresh. They love that taste.”

The restaurant will hold a grand opening celebration Saturday, featuring folk dancers, Latin music and marinated chicken. Down the line, Flores hopes to open a drive-through window and offer delivery.

“We’re working on establishing that foundation,” Flores said. “We’ve just loved the people.”
